It’s that time of year! Time for soups, stews, and hot wholesome dishes!

Chicken Paprikash
Chicken Paprikash is a popular Hungarian dish that Niki told me about, and it’s made to the top of my list because of its simplicity, and because it’s not your usual fare. Chicken, onions, butter, stock, paprika, salt, sour cream. These are the only ingredients you need, making it affordable as well. You can use “skin on, bone in” chicken, or boneless, skinless pieces of chicken.
Forgotten Jambalaya
When I’m in the line, checking out at the grocery store, the little Taste of Home cook books ALWAYS catch my eye. I have such a collection. The recipes are always a hit. I love the zip and heat of Forgotten Jambalaya, bringing this recipe near the top of my list. You can chop the vegetables up early in the week, dump it all in the slow cooker, set it and forget it. I love this recipe!
Slow-Cooker Vegetarian Lasagne
Lately, my daughter has been trying vegetarian dishes, mostly enjoying meat substitutes. This Eating Well recipe for Slow-Cooker Vegetarian Lasagne has been a favorite of ours for “Meatless Mondays” and I’m sure you’ll love it. Homemade lasagne can get rather expensive, and I find this version to be fairly affordable.
Slow Cooker Baked Potato Soup
I’d be completely remiss if I didn’t a) include a potato soup recipe and b) introduce you to one of my favorite slow cooker sites. I give you Baked Potato Soup from 365 Days of Slow Cooking, originally from TodaysMama.com.
Java Roast Beef
This Taste of Home recipe is so simple. The gravy gets a big boost of flavor from the coffee. I strongly suggest brewing a pot of coffee and putting this in the crockpot on Sunday, while you sit with your paper or your weekly plans! Java Roast Beef is seriously simple, and seriously good.
So there you have it, this is what’s for dinner at our house this week. There’s just two of us, so we do a lot of scaling back, and make individual meals for the freezer with the leftovers.
